So today I learned that if the squash is too bitter, it'll put you on the shitter, and in some rare and alarming cases, in the grave. This is after choking down a fair amount of very bitter baked delicata, because I was hungry and peevish at the notion of having to throw out half my supper.

Well, lesson learned.

If the squash is too bitter, quit'er.

I'm okay now! It was relatively mild, and I learned something.

Apparently it's in the growing! Either water stress, or heat stress, or -- interestingly -- cross-pollination with wild types. You can't cook the bitterness in or out, the fruit either develops bitter or develops normally and you won't know till you taste it.

you bet I'm gonna start taste-testing my delicata before cooking it from now on.
